Sugar-Free Coconut Apple Cups
Creamy, sugar-free treats that taste like healthy apple pie!
Servings 8 cups
- 2 Tbsp coconut oil
- 1 apple of your choice (I like using any red variety), diced
- dash sea salt
- 1/2 tsp cinnamon
- 2 tsp vanilla extract
- 1/2 cup coconut butter
Heat the oil in a small pan.
Add the diced apple, a dash of sea salt, and the cinnamon to the mix.
Saute 3-5 minutes until the apple is softened.
Remove from heat and stir in the vanilla.
In a small bowl, combine the warm apple mix with the coconut butter, stirring until well combined.
Dollop the 'batter' into muffin cups (I use silicone liners for this).
Freeze until solid to the touch (30-60 minutes).
