Ingredients

  • 2 Tbsp coconut oil
  • 1 apple of your choice (I like using any red variety), diced
  • dash sea salt
  • 1/2 tsp cinnamon
  • 2 tsp vanilla extract
  • 1/2 cup coconut butter

Instructions

  • Heat the oil in a small pan.
  • Add the diced apple, a dash of sea salt, and the cinnamon to the mix.
  • Saute 3-5 minutes until the apple is softened.
  • Remove from heat and stir in the vanilla.
  • In a small bowl, combine the warm apple mix with the coconut butter, stirring until well combined.
  • Dollop the 'batter' into muffin cups (I use silicone liners for this).
  • Freeze until solid to the touch (30-60 minutes).
  • Enjoy!
