Ingredients

  • ½ cup mayonnaise I use Chosen Foods avocado mayo
  • ½ cup plain yogurt I use a full-fat version
  • 1 ½ Tablespoons rice vinegar
  • 2-3 teaspoons honey depending on how sweet you like it
  • 2 teaspoons Dijon mustard
  • ¼ teaspoon sea salt you may need a bit more to taste
  • ¼ teaspoon black pepper
  • ½ head green cabbage finely shredded; about six cups
  • 2 small carrots grated
  • 2 scallions chopped

Instructions

  • Whisk the mayo, yogurt, vinegar, honey, Dijon, salt, and pepper until smooth and well combined.
  • Pour the dressing over the cabbage, carrots, and scallions and toss well.
  • Taste and adjust honey and salt, if necessary.
  • Refrigerate for 20-30 minutes for best taste.
