- ½ cup mayonnaise I use Chosen Foods avocado mayo
- ½ cup plain yogurt I use a full-fat version
- 1 ½ Tablespoons rice vinegar
- 2-3 teaspoons honey depending on how sweet you like it
- 2 teaspoons Dijon mustard
- ¼ teaspoon sea salt you may need a bit more to taste
- ¼ teaspoon black pepper
- ½ head green cabbage finely shredded; about six cups
- 2 small carrots grated
- 2 scallions chopped
Whisk the mayo, yogurt, vinegar, honey, Dijon, salt, and pepper until smooth and well combined.
Pour the dressing over the cabbage, carrots, and scallions and toss well.
Taste and adjust honey and salt, if necessary.
Refrigerate for 20-30 minutes for best taste.
