Ingredients

. quinoa
, uncooked

T
. olive oil
¼
red onion
, chopped
2
garlic cloves
, minced
small head broccoli
(1-2 cups), chopped
4
crimini mushrooms
, chopped
1
large carrot
, grated

cherry tomatoes
, quartered

. curry powder

. turmeric

. smoked paprika
sea salt
, to taste
dash cayenne pepper

lime
, juiced

. cilantro

water/broth

Instructions
Cook quinoa according to package directions.
Heat oil and add onion and garlic.
Saute 3-5 minutes until softened.
Add in mushrooms, broccoli, and a splash of water or broth if the pan is dry.
Cook 2-3 minutes until broccoli is bright green.
Add in carrot, tomatoes, and spices, along with another splash or water or broth, if needed.
Cook another 2-3 minutes.
Stir in quinoa (once cooked), lime juice, and cilantro until everything is well combined.
Season with sea salt as desired.
