Curried Vegetable Quinoa Bowls

Quinoa and vegetables combine with curry to make this delicious and healthy meal!

Ingredients

  • 1 c . quinoa , uncooked
  • 1 T . olive oil
  • 1/4 red onion , chopped
  • 2 garlic cloves , minced
  • small head broccoli (1-2 cups), chopped
  • 4 crimini mushrooms , chopped
  • 1 large carrot , grated
  • 8 cherry tomatoes , quartered
  • 1 t . curry powder
  • 1/2 t . turmeric
  • 1/2 t . smoked paprika
  • sea salt , to taste
  • dash cayenne pepper
  • 1/2 lime , juiced
  • 3 T . cilantro , chopped
  • water/broth , as needed

Instructions

  • Cook quinoa according to package directions.
  • Heat oil and add onion and garlic.
  • Saute 3-5 minutes until softened.
  • Add in mushrooms, broccoli, and a splash of water or broth if the pan is dry.
  • Cook 2-3 minutes until broccoli is bright green.
  • Add in carrot, tomatoes, and spices, along with another splash or water or broth, if needed.
  • Cook another 2-3 minutes.
  • Stir in quinoa (once cooked), lime juice, and cilantro until everything is well combined.
  • Season with sea salt as desired.
