No-Bake Chocolate Mint Pie

Chocolate and mint combine in this no-bake pie for a raw dessert that will please all!

Ingredients

CRUST:

  • 1 cup almonds
  • ¼ cup cocoa powder
  • ¼ teaspoon sea salt
  • ½ cup soft dates
  • 2 Tablespoons coconut oil melted

MINT LAYER:

  • 2 avocados
  • ½ cup coconut oil melted
  • ¼ cup maple syrup
  • teaspoon sea salt
  • 2 teaspoons peppermint extract
  • 2 Tablespoons water

CHOCOLATE COATING:

  • ½ cup cocoa powder
  • ¼ cup maple syrup
  • 2 Tablespoons coconut oil melted
  • 2 Tablespoons water
  • pinch sea salt

Instructions

CRUST:

  • Process the almonds until they form a meal.
  • Add in the remaining ingredients and process until a dough forms. If it seems dry or like it's not coming together, add in water one teaspoon at a time.
  • Press the mixture into a lightly oiled pie plate.
  • Place in the freezer while you make the mint layer.

MINT LAYER:

  • Process everything together until smooth and well combined.
  • Pour into the pie shell and place into the refrigerator or freezer until firm to the touch (obviously, the freezer will be faster).

CHOCOLATE COATING:

  • Whisk all of the ingredients together until smooth and well combined.
  • Pour and spread atop the solid mint cream layer.
  • Refrigerate or freeze until firm.
  • Cut carefully and enjoy!
