Ingredients

cups
finely chopped cauliflower
about one small head

Tbsp
butter or olive oil
2
Tbsp
plain yogurt
Greek or regular both work
¼
tsp
sea salt
plus more to taste
¼
tsp
black pepper
plus more to taste
Instructions
Steam the chopped cauliflower until easily pierced with a fork (about 10-12 minutes).
Take the steamer basket off of the pot and place it onto a tea towel for a minute or so to drain off any excess water.
Process everything together until combined. Pulse it instead to keep more texture, if you prefer.
Taste for seasoning and serve!
