Soft Chocolate Chip Biscuits

Easy, healthy, and lower in sugar than most cookie recipes, these chocolate chip biscuits are kid-approved!

Ingredients

  • ½ cup spelt flour
  • ½ cup brown rice flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon sea salt
  • 2 Tablespoons grapeseed oil
  • 2 Tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 5 Tablespoons warm milk of your choice
  • ¼ cup chocolate chips

Instructions

  • Preheat the oven to 350 degrees.
  • Mix the flours, baking powder, baking soda, and sea salt in a large bowl.
  • Stir in the oil, maple syrup, vanilla, and milk.
  • Stir in the chocolate chips, reserving a few for the tops of the cookies.
  • Divide the batter into about eight balls and flatten them onto a parchment paper-lined baking sheet (don't knead the dough!). Add the any reserved chocolate to the top at this point.
  • Bake 8-10 minutes or until lightly golden around the edges.
