4 large kale leaves curly variety, de-stemmed and torn into bite-size pieces 2 Tablespoons extra virgin olive oil 2 Tablespoons lemon juice 1 teaspoon raw honey or maple syrup ¼ teaspoon sea salt black pepper to taste ⅓ cup red bell pepper chopped 3 Tablespoons red onion sliced into thin strips 3 Tablespoons dried cranberries 3 Tablespoons raw pumpkin seeds 3 Tablespoons goat cheese crumbled
In a large bowl, whisk together the oil, lemon juice, honey or maple syrup, salt, and pepper.
Add in the kale and 'massage' the leaves with clean hands, working in the dressing to each leaf (30-60 seconds).
Toss with the remaining ingredients.
