Ingredients

  • 3 Tbsp salted peanut butter
  • 2 tsp coconut sugar
  • 1 large egg white
  • 1 Tbsp applesauce
  • dash cinnamon
  • capfull vanilla extract
  • stevia to taste
  • chopped chocolate or chocolate chips as desired

Instructions

  • All ingredients should be at room temperature for best results!
  • Preheat the oven to 350 degrees.
  • Mix everything together until well combined.
  • Top with chocolate chips, if desired.
  • Pour the batter into a well-oiled 6-10 ounce ramekin.
  • Bake for 9-12 minutes or until cookie is 'set' to the touch.
  • Per the hubby, put this in the freezer for 20-30 minutes for best texture!
