Oven-Baked Chocolate Cake for One

This gluten-free chocolate cake for one is a delicious, oven-baked treat! NO microwave needed. It's is also free of oil and low in sugar!

Ingredients

DRY INGREDIENTS:

  • 1 Tbsp buckwheat flour see Notes
  • 1 Tbsp teff flour
  • 2 Tbsp cocoa powder
  • tsp baking soda
  • dash sea salt

WET INGREDIENTS:

  • 1 Tbsp Greek yogurt
  • 1 Tbsp applesauce
  • 1 tsp maple syrup
  • ½ tsp vanilla extract
  • 2 Tbsp milk of your choice
  • chocolate chips or chopped chocolate as desired

Instructions

  • Preheat the oven to 350 degrees.
  • In a small bowl, mix the dry ingredients.
  • Stir in the wet ingredients until well combined.
  • Pour batter into a well-oiled 8-10 ounce ramekin.
  • Top with chopped chocolate or chocolate chips, if desired.
  • Bake 12-15 minutes or until top is springy to the touch.
