Small Batch Low Sugar Peanut Butter Cookies

A deliciously healthy peanut butter cookie that is LOW in added sugar as well!

Ingredients

  • ½ cup natural peanut butter I use salted
  • 2 Tbsp applesauce
  • 1 tsp vanilla extract
  • 3 Tbsp oat flour
  • ½ tsp baking soda
  • 1 Tbsp coconut sugar
  • couple dashes sea salt as needed
  • dash stevia to taste

Instructions

  • Preheat the oven to 350 degrees.
  • Mix everything together in a bowl in the order listed.
  • Using your hands, form six balls of dough and place them onto a parchment paper-lined baking sheet.
  • Press down on each one until fairly flat.
  • Bake 8-10 minutes or until golden.
