Slow Cooker Salsa Chicken

Delicious, fall-apart chicken made with fresh ingredients!

Ingredients

  • 3 pounds chicken thighs trimmed of excess fat
  • ½ large yellow onion chopped
  • ½ large green bell pepper chopped
  • 3 large garlic cloves minced
  • 2 Roma tomatoes chopped
  • juice 1/2 lime
  • 1 tsp sea salt plus more to taste
  • ½ tsp black pepper
  • large handful cilantro chopped

Instructions

  • Mix all of the ingredients together (minus cilantro) in a slow cooker (around 5-6-quart).
  • Let the mixture cook on high for 4-5 hours.
  • Stir in the cilantro at the end.
