Single Serving Chocolate Chip Cookie
This delicious gluten-free chocolate chip cookie is perfect for one! Made with almond and brown rice flours.
Servings 1 cookie
- 2 Tablespoons almond meal or flour
- 2 Tablespoons brown rice flour
- 1/4 teaspoon baking soda
- good pinch sea salt
- 1 Tablespoon soft coconut oil
- 2 teaspoons maple syrup
- 1 teaspoon water
- 1/2 teaspoon vanilla extract
- chocolate chips as desired
Preheat the oven to 350 degrees.
Mix everything together until a dough forms.
Shape the cookie on a parchment paper-lined baking sheet.
Top with chocolate chips.
Bake 8-10 minutes or until the edges are golden brown.
