Ingredients

. buckwheat flour
, ground from raw buckwheat groats

. baking powder

. sea salt
dash powdered stevia extract
, optional

. semi-soft coconut oil

. coconut sugar

egg

. vanilla extract

. chocolate chips
Instructions
Preheat the oven to 350 degrees.
Mix the flour, baking powder, salt, and stevia (if using) in a small bowl.
Beat the oil with the sugar until fluffy.
Beat in the egg and vanilla, just until combined.
Stir in the flour mix and chocolate chips.
Roll the batter into balls and flatten them onto a parchment paper-lined cookie sheet.
Bake 14-16 minutes, until lightly golden.
Allow cookies to cool for 5-10 minutes before moving.
