Oat Bran Pancakes

Ingredients

  • 2 large eggs
  • 2 Tablespoons Greek yogurt
  • few dashes dash salt
  • ½ cup oat bran

OPTIONAL:

  • cinnamon
  • vanilla extract
  • blueberries fresh or frozen

Instructions

  • Whisk eggs, yogurt, salt, and spices until well combined.
  • Stir in oat bran until a batter forms.
  • Heat a skillet over medium heat (cast iron works great!).
  • Add some butter or coconut oil.
  • Once melted and slightly foamy, dollop in the batter to form three equal-sized pancakes.
  • Flip when you see tiny bubbles form and you can easily get your spatula under the cake without it breaking.
  • Cook on the opposite side for 30-60 seconds.
  • Serve as desired (see above for ideas!).
