Coconut Chocolate Chunk Bars

Soft and cake-like coconut chocolate chunk bars made from coconut flour, coconut oil, eggs, and brown rice syrup. A perfect low sugar treat for kids and adults!

Ingredients

  • ½ c . coconut flour , measured correctly (see Notes)
  • ½ t . baking powder
  • ¼ t . sea salt
  • ½ t . cinnamon
  • t . powdered stevia extract , optional
  • 2 eggs
  • ¼ c . coconut oil , melted
  • 2 T . brown rice syrup
  • ¼ c . water
  • ¼ c . milk of your choice
  • 1 T . vanilla
  • 2-3 T . chopped dark or unsweetened chocolate (more or less, as desired)

Instructions

  • It's important to begin with ROOM TEMPERATURE ingredients!
  • Preheat the oven to 350 degrees.
  • In a small bowl, mix the flour, baking powder, salt, cinnamon, and stevia, if using.
  • In a medium bowl, mix the eggs, oil, syrup, water, milk, and vanilla.
  • Pour the dry ingredients into the egg mixture and stir until everything is well combined.
  • Let the batter sit for a moment so that the coconut flour can absorb the liquid.
  • Pour the batter into a well-oiled loaf pan.
  • Top with the chocolate.
  • Bake 24-28 minutes, until the top is set (not jiggly) and the sides are golden brown.
  • Cool 10 minutes.
  • Cut and enjoy!
