No-Bake Chocolate Mint Balls

A low sugar, nut-free treat that is high in natural protein and low in added sweeteners!

Ingredients

  • 1 cup oats
  • cup grated unsweetened coconut
  • cup hemp seeds
  • 3 Tablespoons cocoa powder
  • teaspoon sea salt
  • 1 ½ Tablespoons honey
  • 2 Tablespoons melted coconut oil
  • 3 Tablespoons water
  • ½ teaspoon vanilla extract
  • teaspoon peppermint extract
  • crushed candy canes optional

Instructions

  • Process the oats, coconut, and hemp seeds until broken down into a meal consistency.
  • Pulse in cocoa and salt.
  • Add remaining ingredients, and process until the dough gets clumpy and starts to come together. Add another tablespoon of water if needed. They should be a bit sticky to the touch, as this will help the crushed candy canes adhere to the outside of the ball.
  • Form balls with the mixture (about 12).
  • Roll in crushed candy canes, if desired.
  • Enjoy or chill until ready to be eaten.
