Healthy Chocolate Chip Pizookie

This healthy pizookie recipe is a delicious way to enjoy the modern treat! It's made with whole grain spelt flour, oats, and coconut sugar as healthy replacements for white flour and sugar.

Ingredients

  • 5 Tablespoons spelt flour
  • ¼ cup rolled oats
  • ¼ teaspoon baking soda
  • teaspoon sea salt
  • 2 Tablespoons soft coconut oil
  • 2 Tablespoons coconut sugar
  • 1 Tablespoon nut or seed butter we enjoy peanut or almond butter
  • 1 Tablespoon unsweetened applesauce
  • ½ teaspoon vanilla extract
  • 3 Tablespoons chocolate chips

Instructions

  • Preheat the oven to 350 degrees.
  • Oil a small cast iron skillet (6-9 inches in diameter). You can also use a small pie plate. See Tips and Tricks above regarding the size.
  • In a small bowl, whisk together the coconut oil and sugar until sugar is dissolved.
  • Whisk in the nut/seed butter, applesauce, and vanilla.
  • Mix the dry ingredients together in a separate small bowl.
  • Add the dry ingredients into the oil/sugar mix and stir until combined.
  • Scrape the batter into the oiled skillet and spread out to the edges. It may seem to you that there is not enough batter, but there is!
  • Top with chocolate chips.
  • Bake 13-16 minutes for a 9-inch skillet or 15-20 minutes for a 6-inch skillet (or until the edges are golden).
  • Let cool for at least 10 minutes (this allows the pizookie to set).
  • Cut and enjoy!
