No-Bake Lemon Bars

These no-bake lemon bars are made with nutritious ingredients and plenty of healthy fat! They're a great way to make a classic recipe without turning on your oven.

Ingredients

BASE

  • ½ cup walnuts or pumpkin seeds
  • ½ cup oats or more nuts/seeds
  • ¼ teaspoon salt
  • 1 Tablespoon lemon zest
  • 1 Tablespoon melted coconut oil
  • 1 Tablespoon maple syrup

FILLING

  • 6 Tablespoons coconut oil
  • 3 Tablespoons coconut butter
  • 3 Tablespoons maple syrup
  • 3 Tablespoons lemon juice
  • 2 teaspoons lemon zest

Instructions

CRUST

  • In a food processor, pulse together the nuts (or seeds), oats, and salt until it all resembles a flour.
  • Add in the lemon zest, oil, and syrup, and process briefly until a ball of 'dough' begins to form. If it's too dry, add in a tiny bit of water to bring it all together. Note: Over processing can cause the nuts or seeds to begin to butterize, so only process as necessary.
  • Press the dough into a small glass dish (I used a 7 x 5 inch Pyrex dish).

FILLING

  • Gently melt together the coconut oil with the coconut butter.
  • Stir in the remaining ingredients until smooth.
  • Pour atop the bottom layer.
  • Place into the freezer until set. Bars must be kept frozen or they will melt.
