These no-bake lemon bars are made with nutritious ingredients and plenty of healthy fat! They're a great way to make a classic recipe without turning on your oven.
In a food processor, pulse together the nuts (or seeds), oats, and salt until it all resembles a flour.
Add in the lemon zest, oil, and syrup, and process briefly until a ball of 'dough' begins to form. If it's too dry, add in a tiny bit of water to bring it all together. Note: Over processing can cause the nuts or seeds to begin to butterize, so only process as necessary.
Press the dough into a small glass dish (I used a 7 x 5 inch Pyrex dish).
FILLING
Gently melt together the coconut oil with the coconut butter.
Stir in the remaining ingredients until smooth.
Pour atop the bottom layer.
Place into the freezer until set. Bars must be kept frozen or they will melt.
