Ingredients

  • 1 pound ground beef
  • ¾ cup cooked quinoa
  • 1 small carrot finely shredded
  • ½ cup zucchini finely shredded
  • 3 Tablespoons red onion chopped
  • 3 large garlic cloves minced
  • 1 large egg lightly beaten
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon dried thyme
  • ¼ cup grated parmesan cheese
  • 2 Tablespoons fresh parsley

Instructions

  • Preheat the oven to 400 degrees.
  • Gently mix everything together in a large bowl (by hand is best).
  • Line a baking sheet with parchment paper.
  • Form the meat into 16 balls and place them on the cookie sheet.
  • Bake for 14-17 minutes (they should be browning on top).
