Carrot Brownies

These healthy brownies are made with the surprising addition of grated carrot!

Ingredients

  • 1 cup oat or spelt flour or a combination of the two; see Ingredients and Substitutions above
  • cup cocoa powder
  • 3 Tablespoons coconut sugar
  • ¼ teaspoon baking soda
  • ¼ teaspoon sea salt
  • ¾ cup milk of your choice
  • 3 Tablespoon oil coconut, grapeseed, and olive all work!
  • ¼ cup applesauce
  • 1 teaspoon vanilla extract
  • ¾ cup carrot finely grated
  • ¼ cup chopped dark chocolate or chocolate chips

Instructions

  • Preheat the oven to 350℉.
  • In a large bowl, mix the flours, cocoa, sugar, baking soda, and salt together.
  • In a smaller bowl, whisk the remaining ingredients (save the chocolate chips for the top).
  • Add the wet ingredients to the flour mixture and stir everything until well combined. I add in a few drops of stevia at this time as well.
  • Pour the batter into a well-oiled 8 x 8-inch baking dish.
  • Sprinkle the top with the reserved chocolate.
  • Bake for 15-18 minutes or until a knife comes out clean. DON'T over-bake or they will become dry.
  • Cool, cut, and serve!
