Healthy Banana Chocolate Chip Cookies
These soft chocolate chip cookies are sweetened with banana and a modest amount of coconut sugar.

- ¼ cup buckwheat flour ground from raw groats; see Notes
- ¼ cup brown rice flour
- ¼ teaspoon baking soda
- ⅛ teaspoon sea salt
- ¼ teaspoon cinnamon
- 2 teaspoon coconut sugar
- ¼ cup mashed banana
- 1 Tablespoon melted coconut oil
- ½ teaspoon vanilla extract
- 2-3 Tablespoons milk of your choice see Notes
- 3 Tablespoons chocolate chips or chopped chocolate
Preheat the oven to 350 degrees.
Mix the dry ingredients together (flours, baking soda, salt, cinnamon, sugar).
Stir in the remaining 'wet' ingredients (banana, oil, vanilla, milk). Start with two tablespoons of milk and add more if batter looks too dry.
Line a baking sheet with parchment paper.
Using a small spoon or small cookie dough scoop, divide the batter into 7-9 equal-sized cookies. Stir in half of the chocolate at this point.
Top the cookies with remaining chocolate.
Bake 8-10 minutes.
