Greek Yogurt Biscuits

These delicious Greek yogurt biscuits are the perfect accoutrement to dinner! They’re made with whole wheat flour and Greek yogurt, for a good dash of natural protein!

There’s not much that tops a good biscuit!

Especially one that’s got a little extra protein in it, like today’s ditty.

These biscuits have made a big splash over here, as they’re soft and flaky. They make a perfect side to Beef Stew or Creamy Chicken Soup, and they’re even full of whole grain goodness.

Ingredients and substitutions

  • Whole wheat flour – Spelt flour will also work. Be sure to measure out the flour for best results!
  • Baking powder
  • Baking soda
  • Sea salt
  • Cold butter – You might freeze your butter for 15-30 minutes prior to making this recipe. Cold butter is what adds flakiness, so it’s an important ingredient.
  • Buttermilk – See below for how to easily make your own with your preferred milk.
  • Greek yogurt – Full-fat and 2% both work great! I’ve also enjoyed using sour cream in this recipe.

Directions

Begin by mixing the dry ingredients together in a large bowl.

Cut the butter in to your flour either with a fork or (my favorite) your hands until the mix resembles coarse crumbs.

Separately, mix the yogurt and buttermilk and add it into the flour bowl. Stir gently just until the flour is moistened.

Turn the dough out onto a floured surface and pat it into a rectangle about 1/2 inch thick. Fold the dough in half and gently it press out. Repeat this action 8-10 more times.

Again, pat the dough into a rectangle about 1/2 inch thick.

You can use a biscuit cutter or just cut into squares. This will vary depending on how big you want your biscuits, but I generally make 9-12 biscuits.

Recipe tips

Make sure to not only use cold butter, but also cold yogurt and buttermilk, as this helps create the flaky layers.

Before baking, you can brush the tops with butter or buttermilk.

To make your own buttermilk for this recipe:

  1. Add 1 1/2 teaspoons of lemon juice or apple cider vinegar to a clear measuring cup.
  2. Add in enough milk of your choice to equal 1/2 cup of total liquid.
  3. Stir and let sit for about five minutes.

Greek Yogurt Biscuits (Made with Whole Wheat Flour!)

Ingredients

  • 260 grams whole wheat flour about two cups
  • 2 ¼ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • ¼ cup cold butter cut into cubes
  • ½ cup Greek yogurt full-fat or low-fat
  • ½ cup buttermilk see Recipe Tips above for how to make your own!

Instructions

  • Preheat the oven to 400℉.
  • In a large bowl, mix the flour, baking powder, baking soda, and salt.
  • Add cold butter cubes and cut into the flour with a fork or your hands until the mixture resembles coarse crumbs.
  • In a separate bowl, whisk together the yogurt and buttermilk.
  • Make a well in the center of the flour mixture. Pour yogurt/buttermilk into the well and stir gently until just combined.
  • Turn dough onto a floured work surface and pat it together into a rectangle.
  • Fold rectangle in half, turn dough a half turn, gather any crumbs, and flatten back into a rectangle. Repeat 8-10 more times, folding and pressing the dough.
  • Roll dough on a floured surface to about 1/2 inch thick. Use a biscuit cutter for round biscuits or just use a knife for square ones. You should get 9-12 biscuits, depending on what size you make them
  • Transfer the biscuits to a parchment paper-lined baking sheet.
  • Bake for 14-18 minutes until golden.
