Ingredients

  • 4 hard-boiled eggs
  • 2 ½ Tablespoons mayonnaise
  • ½ teaspoon prepared mustard
  • 1 Tablespoon scallion chopped fine
  • salt and pepper to taste
  • 1-2 dashes or pinches dried turmeric

Instructions

  • Mash the eggs with a fork to your desired consistency.
  • Add in the remaining ingredients and mix well.
  • Serve as is or with bread or crackers.
