Whole Wheat Banana Chocolate Chip Muffins

These soft and delicious whole wheat chocolate chip muffins are sweetened with banana and a touch of maple syrup.

Ingredients

  • 1 cup whole wheat flour
  • ¼ cup quick oats
  • 1 teaspoon baking powder
  • ¼ teaspoon sea salt
  • 1 large banana mashed well
  • ½ cup milk of your choice
  • 1 large egg
  • 3 Tablespoons grapeseed oil
  • 2 Tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • ¼ cup chocolate chips

Instructions

  • Preheat the oven to 350℉.
  • In a large bowl, mix the flour, oats, baking powder, and salt.
  • Separately, whisk the mashed banana, milk, egg, oil, syrup, and vanilla.
  • Add the wet ingredients to the flour bowl and gently mix until combined. Mix in half of the chocolate chips at this time, reserving the other half for the tops.
  • Divide the batter among 12 paper muffin cups; top with the remaining chocolate chips.
  • Bake the muffins for 11-15 minutes or until springy to the touch.
