Ingredients

olive oil

yellow onion
chopped

green bell pepper
chopped

carrot
chopped

celery
chopped

minced

red pepper flakes

salt
plus more, to taste

teaspoon
dried oregano

teaspoon
dried basil

bay leaf

small head green cabbage
(~3 loosely packed cups), shredded

cup
tomato puree
(see Recipe Notes above)

water
(or broth of choice)

fresh parsley
chopped
lemon wedges
for serving, optional
Instructions
Heat oil in a pot.
Add in onion and bell pepper, and saute for 1-2 minutes.
Add in carrot, celery, garlic, spices, and a big pinch of salt.
Cook another 2-3 minutes.
Add in bay leaf, cabbage, tomato puree, and water.
Bring to a boil.
Lower to a simmer and cook, covered, for 15-20 minutes, until cabbage is very soft.
Stir in parsley.
Add salt to taste.
Serve and squeeze in some fresh lemon juice to taste (optional).
