Chocolate Peanut Butter Rice Krispie Bars

These Chocolate Peanut Butter Rice Krispie Bars are a quick and awesome no-bake treat your whole family will love!

Ingredients

  • cup melted coconut oil
  • ¼ cup creamy peanut butter
  • 2 Tablespoons maple syrup
  • ¼ cup cocoa powder
  • teaspoon sea salt (you may need more if using unsalted peanut butter)
  • 1 teaspoon vanilla extract
  • ½ - ¾ cup rice krispie cereal

Instructions

  • Begin with room temperature ingredients, otherwise, the coconut oil will clump.
  • Whisk to together the oil, peanut butter, and maple syrup until smooth.
  • Add in the cocoa, salt, and vanilla, and whisk until smooth and combined.
  • Finally, stir in the rice krispie cereal, beginning with 1/2 cup. I use about 1/2 cup plus two tablespoons in total. Sometimes, I'll add 3/4 cup, depending on how 'krispie' I want it. ;)
  • Pour the mixture into a a small 7 x 5 inch baking dish that is lined with parchment paper.
  • Freeze until solid, about 30 minutes.
  • Store in freezer.
