    Chocolate Peanut Butter Rice Krispie Bars

    These Chocolate Peanut Butter Rice Krispie Bars are a quick and awesome no-bake treat for the whole family!

    You have to make this recipe, it's so good!

    I made these on a whim recently as a test recipe. I quickly made it again the next day after the fam inhaled the first batch!

    They're chocolate-y, they're peanut butter-y, they're perfectly sweet, and they have an irresistible crispety crunch that calls to you from the freezer.

    While I love baking, I do enjoy a good no-bake treat from time to time, and this is the perfect recipe!

    Ingredients and substitutions

    • Coconut oil
    • Peanut butter - You can use any nut or seed butter you like here; I bet cashew butter would be delicious!
    • Maple syrup - A runny honey could work, though honey does impart a stronger flavor.
    • Cocoa powder - Cacao will work, as will carob powder, if you're sensitive or allergic to cocoa.
    • Sea salt
    • Vanilla extract
    • Rice krispie cereal - I bet grated coconut would work, though I haven't tried.

    Recipe steps

    Be sure that all of the ingredients are room temperature. Coconut oil clumps when cold, so this will ensure easy mixing.

    Basically, you just mix the first six ingredients together until smooth, then stir in the krispies.

    I like to add somewhere between 1/2 and 3/4 cup of rice krispies, so the amount can vary, depending on personal taste.

    Recipe notes

    I like to use creamy, salted peanut butter. If you use unsalted, you will probably need a bit more salt.

    This is the rice cereal I like to use. That's just the link to show you; don't buy it from Amazon, as it is far cheaper at Sprouts or Natural Grocers.

    Ingredients

    • ⅓ cup melted coconut oil
    • ¼ cup creamy peanut butter
    • 2 Tablespoons maple syrup
    • ¼ cup cocoa powder
    • ⅛ teaspoon sea salt (you may need more if using unsalted peanut butter)
    • 1 teaspoon vanilla extract
    • ½ - ¾ cup rice krispie cereal

    Instructions

    • Begin with room temperature ingredients, otherwise, the coconut oil will clump.
    • Whisk to together the oil, peanut butter, and maple syrup until smooth.
    • Add in the cocoa, salt, and vanilla, and whisk until smooth and combined.
    • Finally, stir in the rice krispie cereal, beginning with 1/2 cup. I use about 1/2 cup plus two tablespoons in total. Sometimes, I'll add 3/4 cup, depending on how 'krispie' I want it. 😉
    • Pour the mixture into a a small 7 x 5 inch baking dish that is lined with parchment paper.
    • Freeze until solid, about 30 minutes.
    • Store in freezer.
