Simple Cherry Tomato Sauce

A simple and easy tomato sauce made from cherry tomatoes. This accompanies anything from pizza to flatbread to pasta!

Ingredients

  • 2 Tablespoons olive oil
  • 3 garlic cloves minced
  • good pinch red pepper flakes
  • 1 pint cherry tomatoes quartered
  • 1 Tablespoon capers drained
  • salt to taste
  • fresh parsley or basil

Instructions

  • Heat oil in a medium-sized saucepan.
  • Add garlic and a good pinch of red pepper flakes, and cook 20-30 seconds.
  • Add tomatoes and capers and cook for about 12-15 minutes on medium low, stirring intermittently, until broken down and 'saucy'. The sauce should be lightly simmering.
  • Season with salt to taste.
  • Stir in freshly chopped basil or parsley, as desired.
