FOR THE COOKIE LAYER:
Process oats (or pecans) and pumpkin seeds into a meal.
Remove.
Process dates until they resemble a paste.
Add back the oat or pecan and pumpkin seed mix along with the rest of the ingredients for the cookie layer.
Process until well combined, adding water as needed to create the dough.
Make about 8 discs from the dough (it is helpful to moisten your hands with water for this step).
Shape them into cookies.
Put the discs on a plate covered with wax paper and set in the freezer while you make the filling.
FOR THE ICE CREAM FILLING:
Process all the ingredients until smooth.
TO ASSEMBLE THE COOKIES:
Divide the ice cream mix between four of the eight cookies.
Top with the other four cookies, and press them together lightly, trying NOT to squeeze the filling out.
Freeze the sandwiches (this usually takes 4-8 hours).
