Healthy, lower fat Italian salad dressing made with zucchini.

Ingredients

  • 1 large zucchini
  • 6 T. apple cider vinegar
  • 6 T. water
  • 3 T. extra virgin olive oil
  • 1 garlic clove
  • 1 T. dried oregano
  • 3 T. fresh basil or 1 T. dried basil
  • 1/8 t. dried rosemary
  • 1/4 t. dried thyme
  • 1/2 t. sea salt
  • 1/2 t. black pepper

Instructions

  • Blend all 1-2 minutes until smooth and creamy.
  • Keep refrigerated and shake before each use.
