Health Nut Carrot Raisin Cookies (Sweetener-Free)

Ingredients

  • 1/2 c. oat flour
  • 6 T. oats
  • 3/4 t. cinnamon
  • 1/8 t. nutmeg
  • 1/2 t. baking soda
  • 1/8 t. sea salt
  • 1/4 c. raisins
  • 1 egg
  • 1/4 c. applesauce
  • 1/4 c. coconut oil
  • 1/2 t. vanilla
  • 1 medium carrot finely grated

Instructions

  • Preheat the oven to 350 degrees.
  • Mix dry ingredients (flour, oats, baking soda, salt, raisins).
  • Mix wet ingredients in a separate bowl (egg, applesauce, oil, vanilla, carrot).
  • Mix all and let stand five minutes.
  • Dollop the batter onto a parchment paper-lined baking sheet.
  • Bake 15-17 minutes.
  • Cool and enjoy!
