Ingredients

DRY INGREDIENTS:

  • 1 cup teff flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt

WET INGREDIENTS:

  • 1 1/2 large ripe bananas mashed well
  • 1/2 cup milk of your choice
  • 2 Tbsp olive oil
  • 2 Tbsp plain yogurt
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 350 degrees.
  • Mix the dry ingredients in a large bowl.
  • Whisk the wet ingredients in a second large bowl until well combined.
  • Add the dry mix to the wet ingredients and stir just until the dry ingredients are moistened.
  • Divide the batter among 12 paper muffin cups.
  • Bake for 12-15 minutes, just until tops are springy to the touch.

Notes
