    Spicy Black Bean Guacamole Salad

    Today's recipe is a lunch recipe...or at least that's what I had in mind when I wrote it. It's easy enough for a firefighter to throw together at work, but complex enough to be seriously tasty and worthy of an at-home lunch or side.

    It's highly adaptable to suit your personal tastes and delicious in every way!

    SPICY BLACK BEAN GUACAMOLE SALAD

    1 avocado, mashed to a puree

    1 lime (or about 2 T. lemon juice)

    1 garlic clove, grated

    1/4-1/2 t. salt

    1/4-1/2 t. red pepper flakes

    1 15 oz. can black beans, rinsed, drained, and patted dry

    1/4 c. cilantro (or parsley if you're a cilantro hater)

    1/3 c. frozen corn, rinsed and defrosted

    1 small tomato

    2 c. romaine lettuce

    extra virgin olive oil, for drizzling

    toasted sunflower seeds, pumpkin seeds, or pine nuts, optional

    Mix the mashed avocado with the lime or lemon juice, garlic, salt, and red pepper flakes to create the dressing. Toss the dressing with the beans, corn, tomato, and cilantro or parsley. Finally, toss it all with the lettuce. Drizzle a bit of olive oil over the top and add some toasted seeds or nuts to your liking (or not)!

     

    Voila! Easy, delicious, and healthy!

    Accompanied by some grilled tilapia, or stuffed into a spelt flour tortilla with cheese, this is a scrumptious and filling meal!

      This looks delicious. I'm making this this week for sure! Thanks. Scary movie would be "Signs". Even though it's not a horror flick it still bothered me because it could have been real. I couldn't watch it and still can't if I'm alone.

      HFF! Whoa so awesome! You and I are on the same page again! Sweet potatoes and now black beans! hehe. I LOVE spicy food!
      I def do not do scary movies..I was too traumatized by Chucky as a child

      Yum, I just love all the flavours there. And I didn't know some of that stuff about cayenne- awesome! I always used it to help keep me warm and help with digestion- who knew it could help beat off colds and help with my asthma. Thanks for sharing that, you're a gem 🙂

      Okay--anything that involves avocado, black beans, tomato and cilantro makes my mouth water. So good! Only thing I would definitely add is jalopeno. I can't skip the spice!! 🙂

      I used to love scary flicks but now I don't even go near them! 😛 and I don't know how well backed up that whole bit about spicy foods is, but I've always always loved it (and used to overdo it) and I can attest to the fact that Korean elderly people are some of the healthiest elderly people I know! And they have amazing longevity for the most part. so I think that in itself is proof. 🙂

        Haha! There have been a few movies that I've been really freaked out by, but for the most part I love to be scared! Hence the Halloween obsession....
