Happy Monday everyone!
I wanted to begin today by addressing a few comments I’ve received regarding my ‘sugar-free’ sweets. I want everyone to know that I am aware that fruit contains sugar, and I am not in any way trying to be misleading by describing the desserts I am posting as ‘sugar-free’. It is quite a loose phrase, and I would be more accurate to say ‘added sweetener-free’, but that just doesn’t flow as well.
I do include the sugar grams in my nutritional information for those of you that are diabetic or on the Flat Belly Diet. Bear with me for the rest of the month, and I will try to be more accurate in future posts/recipes!
Today’s post is brought to you in light of my Wednesday post (which I’m super excited about)…..
….I tend to have trouble with store-bought jams and jellies because the jams often contain a lot of sugar, and the jellies (while typically sugar-free) will contain a thickening agent called pectin that bothers my belly….
…but this is both naturally sweetened with date puree and thickened with gelatin, which I use in this case for its joint health properties. My husband has a recurring shoulder pain due to heavy weight lifting that we suspect may be tendonitis, so I am hoping that supplementing with the gelatin will aid his pain. It is also high in protein and can be taken for the strengthening of hair, skin, and nails (I use to actually just down the packets of Knox gelatin for these reasons!).
Recipe format is being updated…sorry for any inconvenience!
- 1¼ c. frozen organic raspberries
- 3 T. water
- 2 T. date puree
- tiny pinch of salt
- 1 t. powdered gelatin
- Heat the water and raspberries in a small saucepan.
- Bring to a boil.
- Lower to a simmer.
- Let simmer for 5 minutes.
- Stir in date puree and salt until combined.
- Remove from heat, and sprinkle the mix with the gelatin.
- Stir the mix until the gelatin dissolves.
- Cool in the fridge (this allows the mixture to thicken).
- Spread on toast or use in recipes (such as the one coming Wednesday!)

I love strawberry jam, which is weird considering I don’t really like to eat them or put them in smoothies. My husband’s favorite is raspberry though.

I think my favorite might be blackberry jam, but otherwise, raspberry is phenomenal. Mmmm . . . spread onto a warm piece of toast.
