    Beef and Quinoa Meatballs

    Meatballs For The Boys

    Beef and quinoa come together to make these high protein meatballs!

    Servings: 16 meatballs

    Ingredients

    • 1 lb. ground chicken turkey, or beef
    • ¾ c. cooked quinoa
    • 1 small carrot finely shredded
    • ½ zucchini finely shredded
    • 3 T. red onion chopped
    • 3 large garlic cloves minced
    • 1 egg lightly beaten
    • ½ t. black pepper
    • ½ t. salt
    • ½ t. dried thyme
    • ¼ c. parmesan cheese grated
    • 2 T. fresh parsley

    Instructions

    • Preheat the oven to 480 degrees.
    • Mix everything together in a large bowl (by hand is best).
    • Line a cookie sheet with parchment paper.
    • Form the meat into 16 balls, and place them on the cookie sheet.
    • Bake for 18 minutes (they should be browning on top).
    • Cool and serve!

      Love meatballs and quinoa, pair with carrot noodles and marinara!?!! Serving size 16 meatballs should be corrected 😉

      Not to ask a dumb question, but is that 94 calories PER meatball, or per serving size of 16? These look wonderful.

        Not dumb at all! The nutrition info is set up a little weird...it's PER meatball, and the recipe makes about 16, obviously depending on how big you make them. 😀

      These look delicious as well as nutritious! I am cooking for 1, do they freeze well? I don't know about my favorite, but I boil a Tbs of quinoa for my omelets and grate on some raw cheddar from grass fed cows. It makes a tasty filling meal.

        I imagine they'd freeze well, as long as they're kept sealed tight (no air can enter). Your breakfast sounds mighty tasty! I love eggs and cheese together, and I bet the quinoa gives it a nice texture. 😀
