I have a bit different post for you today, as the folks at One Degree Organics reached out to me about creating a recipe with one of their products.
I get quite a few emails from companies wanting me to try their product, but with my allergies and health situation, it is very difficult to sample things.
One Degree Organics is a totally different story! I use their products all the time on my own, so when they contacted me, it was very easy for me to say yes!

Without sounding like an actual ad for the company, I'll tell you what I know as a plain ol' consumer.
-Their products, which include flours, oats, and various packaged cereals, are all sprouted AND organic. Basically, sprouted grains are more easily digested.
-I also know that they are one of the only (if not THE only) company to have oats free of glyphosate. Glyphosate is a pesticide that has been recently classified as a carcinogen. Many grains (even organic ones) are grown with it, so it's nice to find a brand without it!
What I've learned since being in contact with the company:
-They work with organic farmers who only use plant-based farming.
-As they are organic, they are also non-GMO.
-Their oats are certified gluten-free!

Today's recipe is one created around One Degree's organic sprouted oats.
I grind the oats into flour with my Nutribullet and then use the flour in this recipe.
Sam, Nat, and my hubby are all crazy about this yummy cookie, which I top with a big, fat marshmallow and chopped chocolate. We call it the 's'mores cookie', hehe.
It's a great way to enjoy a healthier summer-ish treat without all of the added sugar!

S'mores Cookie For One
Ingredients
- ¼ cup oat flour
- 2 tsp coconut sugar
- dash sea salt
- 2 tsp soft coconut oil
- 1 Tbsp applesauce
- 1 Tbsp plain yogurt
- 1 tsp milk of your choice
- ½ tsp vanilla extract
- 1 large marshmallow
- 1 Tbsp chopped chocolate or chocolate chips
Instructions
- Preheat the oven to 350 degrees.
- Mix all of the ingredients together until well combined.
- Pour the batter into a well-oiled 8-10 ounce ramekin or mug.
- Press the marshmallow into the center of the cookie and sprinkle the chocolate atop.
- Bake 10-12 minutes or until cooked through.
- Cool and enjoy!

There is NO leavening agent in here, which contributes to a dense, soft texture without any cake-like quality.
I like to add in a dash of cinny for extra flavor!
This is a LOWER SUGAR cookie, as written. The marshmallow and chocolate both add to overall sweetness. Add in another teaspoon of sugar or a dash of stevia if you desire a sweeter taste.
