These oatmeal cookie overnight oats are the perfect nourishing, yet indulgent breakfast to wake up to – They’re packed full of protein and flavor, and they taste like oatmeal cookie dough!
Sorry for the rather long absence lately, but health and family have taken priority, so my little blog suffered in the midst.
Currently, I’m working to heal myself while still juggling the kids and homeschooling, so my schedule is tight, to say the least.
Jade and Nat are both learning so much more than they were online or even when they actually attended school, so it’s very rewarding in that manner.
I have some new recipes to post, but I’m also updating some oldies like today’s overnight oats.
This recipe has been a favorite around here for years, so I’m happy to be resharing it today.
What Are Overnight Oats?
When I first entered the food blogging world, overnight oats were all the rage!
They are a take on a Swiss classic called Bircher Muesli, which is a combination of oats, fruit, and yogurt.
While this recipe doesn’t much resemble the original version, it is still a delicious way to wake up, and it truly tastes like oatmeal cookie dough!
Do you eat it cold?
Yes!
Aside from it’s deliciousness, the whole point of overnight oats is that you prepare it the night before so that you can wake up to a ready-made breakfast.

Oatmeal Cookie Overnight Oats
Ingredients
- 3/4 cup milk of your choice
- 1 1/2 Tbsp raw almond butter (raw gives the best flavor!)
- 2 Tbsp plain yogurt
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- 3/4 cup oats
- 1/8 tsp salt
- 2 tsp maple syrup
Instructions
- Mix the milk and almond butter first to emulsify the butter.
- Add the rest and combine thoroughly.
- Refrigerate overnight.
- Enjoy!

I like to use my Homemade Walnut Milk or Homemade Coconut Milk in this recipe.
My husband described these as tasting like ‘oatmeal cookie dough with the icing all mixed together’…AKA, he liked them.

yes! I knew I wasn’t the only one to think that almond butter gave a great cookie dough like flavor! I always add it in to my overnight oats and sometimes use a mix of the almonds with the skin on and almonds without (the ones without lend a much more sweet, marzipany flavor). I love the idea of using nutritional yeast, I must try it! Thanks for the idea 🙂

I’ve tried that a looong time ago with the nutritional yeast, and I think I added too much of it?!! Hmmmm I’m sooo curious now and wanna give it another try! I’m not a picky eater with “funky” flavors, but the oatmeal I made with the yeast tasted cheesy. lol. 😛

I’ve never heard that about nutritional yeast! Definitely have to give that a try soon. Who isn’t a sucker for anything with the words “Cookie dough” in it?!
