    Raw Andes Mint Pie

    Raw Andes Mint Pie! A rich and creamy dessert that is made with real, whole food ingredients and doesn't require any bake time!

    We all know what men want for Valentine's Day...

    ...chocolate!

    Not really unless you're wearing it, but this pie could definitely be the cherry on top of a romantic evening.

    Last year, I made these Healthy Andes' Mints for my beloved, and this year, I've taken it one (or three) decadent steps further with this delicious, chocolat-y, minty, creamy, make-you-wanna-buy-me-diamonds pie.

    Believe it or not, since my husband and I started having kids (four years ago now), we have been on ZERO dates together!

    Four years, people.

    We love our daughters to pieces, but we also look forward to the days ahead when they start real school, and we can squeeze in a mid-day horror movie together (one of our favorite pastimes). 🙂

    For now, however, we resolve to enjoy the brief moments of silence we get with naps, preschool, and the rare moments when the girls want to watch Sofia the First while donning plastic crowns and princess dresses in the privacy of their own room.

    Raw Andes' Mint Pie (Vegan, Paleo)

    Chocolate and mint combine in this no-bake treat for a raw dessert that will please all!

    Ingredients

    • CRUST:
    • 1 c . pecans
    • 1 c . oats (or more pecans if paleo or grain-free) (I use Country Choice Organic Oats)
    • 20 soft dates (you can also substitute about 2 c. raisins)
    • 5 T . cocoa powder
    • ½ t . sea salt
    • 1 t . mint extract
    • 1 T . coconut oil , melted
    • 1-3 t . water
    • MINT CREAM:
    • 2 avocados
    • ½ c . coconut oil , melted
    • ¼ t . sea salt
    • ¼ c . maple syrup or honey
    • 2 t . mint extract
    • 1 T . water
    • CHOCOLATE COATING:
    • ½ c . cocoa powder
    • ¼ c . maple syrup or honey
    • 2 T . coconut oil , melted
    • 2 T . water
    • pinch sea salt
    • ½ t . mint extract

    Instructions

    • CRUST:
    • Process the pecans and oats (if using) together until they form a meal.
    • Remove the meal and add in the dates.
    • Process the dates until they break down and form a large lump of paste.
    • Add back the pecan mix, along with the cocoa power, salt, mint, and coconut oil and process until well combined.
    • Drizzle in the water, starting with one teaspoon, adding just enough to bring everything together.
    • Press the mixture into a lightly oiled pie plate.
    • Place in the freezer while you make the mint cream.
    • MINT CREAM:
    • Process everything together until smooth and well combined.
    • Pour into the pie shell and place into the refrigerator or freezer until firm to the touch (obviously, the freezer will be faster).
    • CHOCOLATE COATING:
    • Stir all of the ingredients together until smooth and well combined.
    • Pour and spread atop the solid mint cream layer.
    • Refrigerate or freeze until firm.
    • Cut carefully and enjoy!

    Notes

    Nutrition facts are based on using oats, 20 dates, and maple syrup. Weight Watchers points (new system): 10. For this to be truly raw, be sure to use raw cacao powder.

    Notes:

    You can pretty much use any nut or seed you like in the crust. Walnuts are good, and I've also had luck with pumpkin seeds.

    Who needs boxed candies when you can make a rich and self-indulgent dessert like this in the privacy of your own gluttonous home?

      I made this recipe a while ago, exactly as written and using all 1st choice ingredients. It was absolutely incredible! I thought that I bookmarked this but forgot. Anyway, I have been searching for it for days now to make again for a special get-to-gether and was getting really frustrated until this very moment bc I finally found it!!! Thank you Lauren for this recipe, it is truly amazing. Delicious & healthy.

      This recipe was a hit all last summer! I used peppermint oil instead of extract because it's so much cheaper and you only need several drops. I fooled around adding more or less of some of the ingredients. I also added cayenne pepper to the chocolate to give it a nice spice. It was never the same twice. Thank you so much!

      Hi Lauren!
      I was making your raw mint pie with a Ninja. Now I have a Vitamix and its soooo difficult to combine everything... If you use a high speed blender can you pls tell me how you make the crust? Thx
      Btw this is our favorite treat!

        Hi Felicia,

        I use a food processor to make the crust and am not really sure how the Vitamix would compare. I would try grinding the nuts and oats together first and then adding the rest a little at a time. I know there's a tamper with the Vitamix that might help as well. I hope that helps and that you get to enjoy it again! 🙂

      So, I made this today with hazelnuts and orange essence instead of mint extract and it was sooooooooooo good! I recommend trying it. Tastes like a terrys chocolate orange!

      Hello. Thank you for posting this recipe. I had paleo and vegan friends over last night and made it for them. This was a real hit. As a non-vegan, I have to say this was just a delicious pie that I would make for myself. The minty smooth middle layer is the perfect compliment to the dark chocolate topper.       Oh my gosh! This looks incredible. I remember those chocolates from my childhood. I always kept them in the fridge so they were nice and cold. I need to try this. I love the idea of the avocado in the centre. It's like a giant nanaimo bar!
