    No-Bake Chocolate Mint Pie (Tastes Like an Andes Mint!)

    No-Bake Chocolate Mint Pie - A rich and creamy dessert that is made with real, whole food ingredients and doesn't require any bake time. Tastes like an Andes mint!

    This delicious chocolate mint pie is an indulgent take on my Healthy Andes' Mints.

    Back when I first started this blog, I would ask my husband to help me with recipe ideas. Basically, what recipe would you like me to make healthier for you?

    He excitedly told me how much he'd like to have a healthier Andes' mint.

    We both have an intense love of the chocolate mint combo, so I was on board immediately!

    After the mint recipe, I went on to create this delicious pie, which is my husband's all-time FAVORITE treat on the blog!

    Ingredients and substitutions

    Bite of chocolate mint pie on a fork.

    Here's what you'll need for the chocolate crust:

    • Almonds - If you're not a fan of almonds, I've also had success with pecans, walnuts, and pumpkin seeds. You can even substitute 1/2 cup of the almonds with 1/2 cup oats, though you may need a little water if the mix is dry. If you only have almond flour/meal on hand, you can use 1 1/4 cups in place of the almonds.
    • Cocoa powder - To keep it raw, use cacao powder.
    • Sea salt
    • Dates - I've used raisins as an alternative, but I prefer dates.
    • Coconut oil - When cold, this helps hold the pie together and gives it structure.

    For the mint layer:

    • Avocados
    • Coconut oil
    • Maple syrup - You can also use honey, though it does impart its particular flavor.
    • Sea salt
    • Peppermint extract - Be sure you get peppermint, not spearmint or any other mint!
    • Water

    Finally, the soft chocolate topping:

    • Cocoa powder - Cacao will also work.
    • Maple syrup - Honey or agave can work, if you enjoy those flavors.
    • Coconut oil
    • Water
    • Sea salt

    How to make chocolate mint pie

    Begin by making the chocolate crust.

    You'll want to process the almonds first to make your flour. Be careful not to go too long or you'll end up with almond butter!

    Once you have your flour, add in the remaining ingredients and process until a dough forms.

    Press your pie dough into a lightly oiled pie plate. Rinse your processor to prepare for the next layer.

    • Chocolate dough in a food processor.
    • Unbaked chocolate pie crust pressed into a pie plate.

    Add the ingredients for the mint cream and process them until smooth and creamy.

    Pour the mint atop the pie crust and set in the freezer to chill while you make the final layer.

    For the chocolate topping, you can just whisk everything together in a small bowl, no need for the processor.

    Pour the chocolate atop the mint cream.

    • Chocolate ganache in a white bowl with a red spatula.
    • Chocolate spread atop a pie.

    Set the pie into the fridge (or freezer, depending on how quickly you want to eat it), to set.

    Who needs processed candies when you can make a rich and indulgent dessert like this in the privacy of your own home?

    How to store

    We store the pie in the pie plate with a plate on top.

    I like to keep pie in the refrigerator, as it freezes solid when left in the freezer past a certain point.

    Keep in mind that once you cut into the pie, the pretty green avocado layer will take on a darker, brownish green color as the avocado oxidizes.

    Ingredients

    CRUST:

    • 1 cup almonds
    • ¼ cup cocoa powder
    • ¼ teaspoon sea salt
    • ½ cup soft dates
    • 2 Tablespoons coconut oil melted

    MINT LAYER:

    • 2 avocados
    • ½ cup coconut oil melted
    • ¼ cup maple syrup
    • ⅛ teaspoon sea salt
    • 2 teaspoons peppermint extract
    • 2 Tablespoons water

    CHOCOLATE COATING:

    • ½ cup cocoa powder
    • ¼ cup maple syrup
    • 2 Tablespoons coconut oil melted
    • 2 Tablespoons water
    • pinch sea salt

    Instructions

    CRUST:

    • Process the almonds until they form a meal.
    • Add in the remaining ingredients and process until a dough forms. If it seems dry or like it's not coming together, add in water one teaspoon at a time.
    • Press the mixture into a lightly oiled pie plate.
    • Place in the freezer while you make the mint layer.

    MINT LAYER:

    • Process everything together until smooth and well combined.
    • Pour into the pie shell and place into the refrigerator or freezer until firm to the touch (obviously, the freezer will be faster).

    CHOCOLATE COATING:

    • Whisk all of the ingredients together until smooth and well combined.
    • Pour and spread atop the solid mint cream layer.
    • Refrigerate or freeze until firm.
    • Cut carefully and enjoy!

      Lauren, I had just bought avocados and had every ingredient on hand... HAD to make this! YUMMY!!!!!! Used cashews for base (all I had.) Will definitely make this again!!

      I made this recipe a while ago, exactly as written and using all 1st choice ingredients. It was absolutely incredible! I thought that I bookmarked this but forgot. Anyway, I have been searching for it for days now to make again for a special get-to-gether and was getting really frustrated until this very moment bc I finally found it!!!       This recipe was a hit all last summer! I used peppermint oil instead of extract because it's so much cheaper and you only need several drops. I fooled around adding more or less of some of the ingredients. I also added cayenne pepper to the chocolate to give it a nice spice. It was never the same twice. Thank you so much!

      Hi Lauren!
      I was making your raw mint pie with a Ninja. Now I have a Vitamix and its soooo difficult to combine everything... If you use a high speed blender can you pls tell me how you make the crust? Thx
      Btw this is our favorite treat!

        Hi Felicia,

        I use a food processor to make the crust and am not really sure how the Vitamix would compare. I would try grinding the nuts and oats together first and then adding the rest a little at a time. I know there's a tamper with the Vitamix that might help as well. I hope that helps and that you get to enjoy it again! 🙂

      So, I made this today with hazelnuts and orange essence instead of mint extract and it was sooooooooooo good! I recommend trying it. Tastes like a terrys chocolate orange!

      Hello. Thank you for posting this recipe. I had paleo and vegan friends over last night and made it for them. This was a real hit. As a non-vegan, I have to say this was just a delicious pie that I would make for myself. The minty smooth middle layer is the perfect compliment to the dark chocolate topper.       Oh my gosh! This looks incredible. I remember those chocolates from my childhood. I always kept them in the fridge so they were nice and cold. I need to try this. I love the idea of the avocado in the centre. It's like a giant nanaimo bar!
